What Is Espresso Dosing?

Dosing is the process of measuring the right amount of ground coffee into your portafilter basket before pulling a shot. In specialty espresso, this is done by weight (in grams), not by volume. Volume is unreliable because grind density varies—a finer grind packs more mass per cubic centimeter than a coarser one.

The standard espresso dose for a double basket is 18–19g. Single baskets use 7–9g. But the exact number depends on your basket's rated capacity and your chosen brew ratio.

Understanding Brew Ratios

The espresso brew ratio is the relationship between the dry coffee input (dose) and the liquid espresso output (yield):

  • Ristretto: 1:1 to 1:1.5 — 18g in → 18–27g out (concentrated, thick, sweet)
  • Espresso: 1:2 to 1:2.5 — 18g in → 36–45g out (balanced, the standard reference)
  • Lungo: 1:3+ — 18g in → 54g+ out (lighter, more bitter, lower TDS)

If your dose is 18g and you target a 1:2 ratio, your yield is 36g of liquid espresso. Weighing your output with a drip scale is the only way to hit this consistently—eyeballing volume in a shot glass is not accurate enough because crema volume varies shot to shot.

Why 0.5g Matters

At a fixed grind setting, adding 0.5g more coffee makes the puck denser. This increases resistance to water flow, slowing the shot and increasing extraction time. The effect on flavor is measurable:

  • +0.5g dose → shot runs ~2–3 seconds slower → slightly higher extraction → more body, potentially more bitter
  • −0.5g dose → shot runs ~2–3 seconds faster → slightly lower extraction → thinner body, more sour

This sensitivity is why a consistent dosing workflow is essential. Dose variation is one of the largest sources of shot-to-shot inconsistency in home espresso.

The Dosing Cup (Smelling Cup): What It's For

A dosing cup is a small cup that sits between the grinder's chute and the portafilter basket. It serves three functions:

  1. Captures the dose cleanly without grounds bouncing off the basket rim and onto the counter.
  2. Lets you check aroma before dosing—the concentrated aromatics trapped in the cup are a quick quality indicator for your beans.
  3. Allows WDT distribution before transferring to the basket, or you can distribute directly in the cup and then pour cleanly into the basket.

An inverted dosing cup uses a reversed design that captures grounds via static electricity—you grind directly into the inverted cup, then flip it over the portafilter to deposit the dose. This eliminates transfer clumping for very fine grinds.

The Dosing Ring: Preventing the Mess

A dosing ring is a magnetic collar that attaches to the rim of your portafilter basket. When you pour grounds from the dosing cup, the ring raises the effective wall height by ~15–20mm, catching any grounds that would otherwise spill over the basket edge.

The magnetic attachment means it releases easily when you flip the portafilter—it stays on through the WDT and tamping steps, then falls away when you invert or pull it off.

The combination of dosing cup + dosing ring creates a clean, controlled workflow that keeps your espresso station tidy and reduces dose weight variation caused by grounds loss.

Building a Repeatable Dosing Workflow

  1. Tare your scale with the empty portafilter
  2. Grind into the dosing cup (or directly into the basket with the dosing ring attached)
  3. Transfer dose, check weight (target ±0.2g of your recipe)
  4. Distribute with WDT or gravity distributor
  5. Tamp at consistent pressure
  6. Pull shot and weigh output yield

Repeat until the ratio and time are consistent. Then lock in the grind setting and repeat from step 1 for every shot.
